Hildegard’s Cookies of Joy
I adapted my own recipe based on several versions found online. Try baking Hildegard’s cookies of joy for yourself.
• 3/4 cup of unsalted butter, softened
• 1 cup packed brown sugar
• 3 egg yolks
• 2 cups flour (Hildegard used whole wheat flour, but all-purpose flour works)
• 1 1/2 tsp baking powder
• 1/2 teaspoon of salt
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1/2 tsp ground cloves
1 Cream together butter and sugar.
2 Beat in egg yolks.
3 In a separate bowl, combine flour, baking powder, salt, cinnamon, nutmeg and cloves.
4 Gradually combine dry ingredients into wet ingredients. Don’t overmix.
5 Chill the dough in the fridge for 1 hour.
6 Preheat the oven to 350 degrees Fahrenheit.
7 Roll dough into 1-inch balls and place onto a parchment lined baking sheet. Press down to slightly flatten into 1-inch rounds.
8 Bake for 12-15 minutes or until slightly golden around the edges.
9 Leave cookies on the baking sheet for 5 minutes, then transfer onto a cooling rack.
